1980 : I start my career at the pastry shop “Laloue”

1983 : employed in the Pâtisserie Millet at the time President of the Pastry Confederation

1985 : Pastry shop Hellegouarch in Paris

1986 : I work at the pastry shop “Peltier” along side Lucien Peltier. This year I obtain the 4th prize at the Charles Proust competition

1987 : 10th prize of the Charles Proust competition

1988 : Head pastry chef at the Toît de Passy  (1 star restaurant in the Michelin Guide)

1989 : departure for Great Britain, head pastry chef at the Manoir des Quat’s Saisons in Oxford (2 stars in the Michelin Guide and 19,5 in Gault & Millau)

1991 : Pastry chef (second in command) at the well known pastry shop Mauduit

– 1st prize Négrita cup et 1st price for entremets and petits fours at Arpajon

– Teaching chef in charge of the advanced pastry level at the school Le Cordon Bleu (1991 to 2011)

– 1993 : the year I turned 30 and accomplishment of severals years work, I received the medaillon and title of Meilleur Ouvrier de France  ( Best French Craftsman)

– 1999 : trainer of the french team, victorious at the world pastry cup

– 2001 : opening my first pastry shop 2 rue Wurtz in Paris 13

– 2005 : Member in the association Relais Desserts International

– 2010 : opening the 2nd Pastry shop Kyoko Pastry rue de la Convention in Paris 15

– 2014 : opening of my Workshop / Laboratory in Villejuif (94)
